easiest breakfast bars ever.

happy saturday! happy weekend!

just popping in here to leave a recipe for the easiest on-the-go hearty breakfast bar i've made.  recipe inspiration comes from dana from minimalist baker.  that gal sure knows how to whip up some delicious eats with so few ingredients.  that's what i'm talkin bout.

she has a few recipes similar to this one, but i just wanted to mention how customizable and super easy they are to make.  

i made these in less than five minutes.

i added sunflower seeds, walnuts, and mini chocolate chips to this particular batch.  i would also want to try combinations using quinoa, other types of nuts and seeds, and other types of nut butters.





i've made dana's version of this recipe into the cute little energy balls a few times.  i was so shocked the first time at how tasty they were!  i would bring a couple of them with me to work and have them with my coffee.  they are somehow super satisfying and ward off those awful late morning tummy hunger grumbles.  




this time i was experimenting with the recipe and making them into bars, just for fun.  either form that this yummy concoction comes in is equally easy to make.  

to make them less crumbly, i'd need to add extra peanut butter or some honey.  just keep them in the fridge and they're good to go!










Easiest Breakfast Bars Ever
Makes about 10 bars
Keep cool or refrigerated


Ingredients:

  • 1 cup of pitted, dried dates
  • 3 TB peanut butter
  • 1/2 cup oats
  • 2 TB sunflower seeds
  • 2 TB chia seeds
  • 2 TB mini chocolate chips
  • 1/4 cup chopped walnuts

Instructions-

In a food processor, chop the dates into little bits.  Add the peanut butter and pulse again until both ingredients come together.

Remove from food processor and place in a large bowl.  Add the remainder of the ingredients and mix well with a spoon or your *clean* hands. 

If the mixture is too crumbly to take form, add honey one tablespoon at a time, until it all comes together.

Either roll the dough up into balls and place on parchment paper to refrigerate, or flatten into a small baking dish on top of parchment paper.  Cover, and let them chill in the refrigerator.  Cut into rectangles.  

Wrap individual bars in foil or plastic wrap, and have them ready for you to grab when you're running out the door (although, I've been eating them straight out of the fridge because I like them best cold)!
